Cooking with Confidently Living – Asopao de Arroz

Here is a simple recipe for a traditional comfort food from Puerto Rico.

20150409_135735 (1)It’s called Asopao de Arroz or Rice Stew and is full of flavor and easy on the system if you intend on eating it when you have a cold or aren’t feeling well.


This is one of my favorite dishes and I make it fairly often at home.  Especially good during a chilly day and it’s pretty quick to prepare.



  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp cilantro dried or 2-3 tsp fresh
  • 1 tsp paprika (optional)
  • 1 pk of Sazón seasoning
  • 1/3 cup sofrito fresh or frozen
  • 2 heaping tbls of garlic crushed/paste
  • 2 tbls of tomato sauce
  • 4-5 cups of water
  • 1/3 cup of medium grain white rice
  • 1 small can of white beans


Optional Ingredients

  • 3 tbls of green olives with pimento
  • chopped chicken breast
  • chopped ham
  • chopped stewing beef
  • garbanzo beans instead of white
