Thanksgiving is one of my favorite holidays mainly because I enjoy the whole process of cooking a nice meal for my family. These past few years have been a bit of a challenge as a result of my daughter becoming first a vegetarian and later a vegan and the rest of us having gluten or other food sensitivity issues. I have learned to be creative when it comes to our Thanksgiving feast.
