What’s for Dinner Tonight?

Tonight we don’t exactly have a dinner recipe but makes a great desert or even  a nice treat for breakfast.

Vegan Apple Cake


Having a vegan in my household I’m always looking for ways to transform my typical recipes to adjust to her non animal product life style.  I recently altered a basic Apple Pie Cake recipe that I’ve used for years.

It’s really a quick and simple apple treat great for the fall.


1/3 cup brown sugar

1tbsp Cinnamon


Cake Batter

1/2 cup coconut oil to replace the butter

2/3 cups white sugar or raw sugar


Melt the Coconut oil and cream it with the sugar. While that’s mixing you’re going to take

2 tbsp of ground flax seeds mixed into 6 tbsp of water let it sit for 5 minutes till it turns gooey like eggs add them to the mixture.



1 1/2 cup flour

1 3/4 tsp baking powder

1/2 cup rice milk to replace regular milk

1 tsp vanilla

To assemble the cake

Chop 1 apple

put a layer of batter in pan then layer streussel, apples, more batter, more streussel and more batter continue till all of the ingredients are used up.  Bake at 350 for 34-40 minutes.

Now the trick with this is you have to work fairly fast because the batter will stiffen up and the next time I make it I might cut down the amount of sugar just a bit.
