Tonight’s dinner is
Zucchini Ribbons Sautéed in Olive Oil and Garlic
This is a pretty simple dish with lots of flavor and can be mixed with pasta to give you a more substantial meal.
2 zucchini sliced into ribbons using a peeler or slicer
2-4 cloves of garlic crushed
1-2 tsp of olive oil
salt and pepper to taste
Heat oil add garlic and cook for a few minutes until fragrant add zucchini ribbons and sauté until tender add salt and pepper to taste. Top with some red sauce or have as is.
